Almost Pizza

Pizza? Tons of bad cheese, way too much pizza sauce, then comes almost pizza.

 

Make half the amount of pizza dough. (1 to 1 1/2 cups of floor)

 

Slice a large ripe tomato (no, not from the supermarket, a tomato from a farmers market)

 

Dice another tomato and union, sauté them together in olive oil

 

Rough slices of about 2-3 oz. of Asiago, Fontina or Gouda cheese

 

Pieces of 2-3 oz. of Brie or other soft and rich cheese

 

Roll the dough, add tomato slices, sautéed union and tomato, and spread the Brie and then the other cheese.

 

Bake in a large baking pan on 400F for 20-25 minutes.

Kale in Clam Chowder

 What else can you with the tough kale you buy in the super? Mushrooms, potatoes, yams, olives and similar items can be added. The kale can be julienned , which makes it more refined and Portuguese, but still all these variants are not very interesting cousins and incest is not fun.

Add to that that in early spring, farmers have young almost spinachy kale with kale taste and spinach delicacy. Now adding potatoes is brutal, mushrooms are overwhelming and olives are way too dominant. Then you remember the can of clam chowder you have in the pantry.

Water down the chowder a little, to mild it, and add the rinsed kale as is. Salt and pepper and try not to finish the full pot by yourself right away.

Sausage, mushrooms, fennel and olives stew

4-6 Sausages cut into an inch long links

1 Fennel diced

A package of sliced mushrooms

1 diced onion

1 glove of garlic

10-50 well marinated olives (can have pits and of any color)

Cumin, salt, pepper and paprika

 

Sauté sausage links in olive oil, when browned add onion. Later add garlic and then the mushrooms. Sauté until mushroom lose most of their water. Add fennel and olive. Add spices to taste. Cover pan and simmer for about 15 minutes.

Sour Kraut, Edamame and pork chops

 

A bag of sour kraut

A bag of frozen Edamame

3 pork chops


Combine all ingredients in a oven proof pot. Add salt, pepper and a little curry. Bake for 4 hours on 250F. The results is a surprising combination of sour kraut and Edamame and a very refined dish.

Salad Soup

 

You made a fresh salad with tomato, cucumber, scallion, pepper and fresher than fresh farmer market's lattice.

You add some olive oil, vinegar and salt and pepper, but you realized that you want some warm.

 

In a frying pan sauté the salad until the tomato softens and produces enough liquid.

You now have a fresh soup whose broth consists of oil, vinegar, tomato juices and some water.

The soup is very refreshing.

Edamame in tofu/soy milk sauce

Thaw a package of edamame beans. Sauté edamame is olive oil until starts to brown.

 

Puree 1/3 of a package of tofu in a cup of soy milk and add salt and pepper. Pour sauce on the edamame and continue to sauté until liquid is reduced 50%.

Chicken Breasts in eggplant, butternut squash and mushrooms

Several chicken breasts well browned.

 

Large cubes of butternut squash slightly browned

 

Large cube eggplants first somewhat sautéed

 

A box of sliced mushrooms sautéed until brown

 

In a roasting pan lay the butternut squash and eggplant first. Put the chicken breast on top and cover with the mushrooms. Roast on 375 for an hour or less.

 

Spicing is done separate for each ingredient
