Puree 1/3 of a package of tofu in a cup of soy milk and add salt and pepper. Pour sauce on the edamame and continue to sauté until liquid is reduced 50%. Chicken Breasts in eggplant, butternut squash and mushroomsSeveral chicken breasts well browned.
Large cubes of butternut squash slightly browned
Large cube eggplants first somewhat sautéed
A box of sliced mushrooms sautéed until brown
In a roasting pan lay the butternut squash and eggplant first. Put the chicken breast on top and cover with the mushrooms. Roast on 375 for an hour or less.
